How to Make Low Carb Chicken Stew

To make this low carb chicken stew, begin by collecting your ingredients. The star of this stew is its protein source: boneless, skinless chicken thighs, which stay extra moist while cooking and have great flavor.

Gather Up These Ingredients:

  • 2 tablespoons olive oil

  • 2 pounds boneless, skinless chicken thighs (about 2 thighs), cut into 1-inch chunks

  • Kosher salt and freshly ground black pepper, to taste

  • 1 medium sweet onion, diced

  • 3 carrots, peeled and diced

  • 2 celery ribs, diced

  • 3 cloves garlic, minced

  • 1 tablespoon tomato paste

  • ½ cup dry white wine

  • 2 ½ cups chicken stock

  • 4 sprigs fresh thyme

  • 2 bay leaves

  • 1 pound red potatoes, cut into 3/4-inch chunks

  • 2 tablespoons chopped fresh parsley leaves


Instructions

Begin by heating the olive oil in a large pan or Dutch oven. Add the cubed chicken, season with salt and black pepper, and stir for 3-4 minutes until chicken is browned. Remove the chicken from the pan and keep on a plate.

Then, add the chopped onion, carrots, celery, and garlic. Saute until cooked, another 4-6 minutes. Once the vegetables are fully cooked, add 1 T. tomato paste and 1/2 cup dry white wine. The wine is optional, so if you do not wish to use it, simply substitute an extra 1/2 cup of chicken stock. Cook for 1-2 minutes until the alcohol from the wine has burned off.

Next, add your reserved chicken cubes, diced potatoes, thyme, and bay leaves. Cover with 2 1/2 cups of chicken stock. Whenever possible, use low-sodium chicken stock, as this helps to regulate blood pressure. Cook until the potatoes are cooked through, about 8-10 minutes. Serve and enjoy
